Peillant Naturel or Pet Nat is also called Methode Ancestrale. It is a method of making sparkling wine that predates Methode Traditional (champagne) by almost 200 years.
In so many ways, Jules is made like a farmhouse cider - hazy, bottle-conditioned, rustic. Expect some sediment/solids from the yeast that fermented in the bottle, which makes the wine a little bit more funky and full flavored. Jules has aromas of slightly green strawberries and stone fruits as well as a little burnt sugar and grassiness. Rich and fruity for a white wine, but with a nice acidic balance and some citrus aromas. Jules could benefit from a little cellaring but can be enjoyed now as well.
