Pigeon Hawk is the name John James Audubon assigned to the bird we now call a Merlin. While our kestrel boxes were put up around the farm to attract their diminutive cousins, we’re delighted to attract mating pairs of Merlins to these houses year after year. These small-sized falcons are the species most commonly found scouting our orchards for the small rodents that so often damage young fruit trees. We honor their role in our success with this layered, dry cider: bright, juicy notes of vanilla, caramel, and green candy apple, with an undeniable barrel finish.
