CIDER WITH GRAPE SKINS

Pompadour is a rosé-style cider made with Roxbury Russet and Ashmead's Kernel apples, Wickson crabapples, and second use Chambourcin grape skins. We rehydrated the grape skins and let the cider rest on them, and then blended in a bit of wine for additional color. Pompadour pours a pale, blushy pink, and has notes of ripe cherries, honey, and bright yellow apple, with a subtle vinous finish.
