CIDER made with stayman winesap apples

The Stayman Winesap apple has a hardy red skin, yellowish flesh, and a pleasing aroma. We allow the juice of these heirloom apples to ferment spontaneously, without adding any yeast, using the ambient flora on the skin and calyx to determine its finished character. Aged for 8 months, this cider is a representation of our Adams County terroir: rustic, bright, and fragrant.
