In Pennsylvania Dutch folk art a distlefink is a goldfinch, but like a Jimi Hendrix guitar lick with a fuzz pedal, wild yeast gives this finch a funky edge. Made entirely from peaches, it tastes of tart fruit and funk in equal measure, balancing the bright aroma of fresh peach with unabashed funkiness in a quenching, sessionable sipper.
