manchurian ciderkin
low-abv cider made from second-use crabapple pressings
Ciderkin is a historic beverage made from spent apple skins and fruit flesh. We take these scraps from the apple press, rehydrate them in water overnight, and press them again. The result is a light, crisp, low-ABV beverage that retains the flavor and character of the apple while still being crushable and approachable.
This ciderkin was made using Manchurian crabapples, which are powerful flavor bombs of acidity and bright fruity tartness, with flavors similar to lemon, orange zest, and stone fruits. It pairs very well with briny seafood, fresh garden salad, and dark chocolate. Great for candlelit dinners and dessert with friends!
